What would happen if I wired in a potentiometer ?
The temperature control options I have seen have been quite expensive!

Can you please explain how you are going to wire the potentiometer into the circuit. You have been informed that this will not work.

What do you class as 'expensive'?

A potentiometer is not designed to handle the current of a heating element. They will only handle a few hundred milli watts as a rule. There are high power versions available but these are rather specialist and probably more expensive than a simple thermostat.

If you wire a potentiometer in series with your heating element it will glow brightly and emit smoke.

Okay, no potentiometer.

What kind of thermostat might I need? How do I control the temperature of water? How would these items send information to the heater?

Okay, no potentiometer! What exactly do I need to measure and control temperature? How will information be sent to the heater?
