I'm due to start a loft conversion and building regs require smoke alarm, can anyone tell me if I need to install interlinked smokes on every floor ?

One thing that affects the system to be installed is whether the upper rooms have fire rated doors.
 
Or Approved Document B......because you have opened up a new circulation space, BC will request minimum of detection on ground floor hallway, first floor landing and new loft landing. All will need to be interlinked. Dependent on the original layout, you may be request to change doors or install further detection in bedrooms. Would always suggest waiting for BC report, before commencing works.
