Dependent on the freezer temp, you may have to source gear rated beyond the normal temp' tolerances of standard cables and plastics.

PVC for instance shouldn't be worked/installed with temp's less than 5c it can tolerate usually to -20 but won't be resistant cracking if moved or knocked etc...

Last walk in fridges I did was done in TPE insulated cable good and flexible to -40c and it was -22c in the fridges, can be sourced from specialist cable brands like LAPP or IGUS.

Can't you install the FCU outside the freezer? Preferably install the PSU external as well and just run the ELV supply into the freezer. It would save a lot of hassles if you can. As already mentioned pressure washing, low temperatures and condensation due to very high relative humidity are all considerations.
 
What's this PSU for? If it's for a CCTV camera or trapped person alarm you'd be better off having as much of it outside the freezer as you can.
