I have added a new CU next to an existing one. The earthing for the building is via an earth rod. Can I connect the new CU earth to the existing CU or do I need to take another cable from the new CU down to the earth rod?
 
The answer is yes providing the existing earthing conductor to the electrode is suitable and connected to the earth terminal in the existing CU.
 
If you need to ask, then you shouldn't be installing consumer units.
to be fair, i think it's a fair question if OP is young on experience. after measuring the existing Ze , it may be advantageous to add a second rod and cross link the 2 CUs to obtain a better value. (discuss???).

I’d arrange it so both rods connect to one separate earth block then an earth to each CU from there. That way it’s a little more obvious what has been done and both rods remain connected if one or the other CU is removed.

Yes, I guessed as much.

A second rod is a possibility, but adding a second rod needs careful planning. You may not get the benefit you desire if you put the second rod too close to the original.
