Hi,

I have a hydraulic valve with a two 24Vdc, 31W coils. How do you calculate the size of the diode to place across a coil to prevent voltage spikes or back EMF?

Any general purpose rectifier Diode will do for this application, 1N400X series spring to mind, (1N4001 to 1N4007), these are common and can be got from almost anywhere, Maplins, Rapid, CPC/Farnell, RS to name a few.
