Could someone give me a rundown of how I would go about disconnecting two PIR’s from an existing installation?

I’m knocking down a rotten wooden frame conservatory and a shed which have sensors in and will need to permanently remove the PIRs from the system.

Could anyone help me out?

first determine which zones the PIRs are in the control panel.
 
In the engineer mode > program (1,2,3) > used zones change 4 & 5 to "OFF"

You may know the following bit already but just in case.....

You also have a global tamper e.g. all your tamper loops are in series and then connected across the tamper terminals. You will need to remove the tampers for 4 & 5 and the put the rest back in series. Use your meter to confirm continuity before connecting back up. If you have an open circuit tamper you will not be able to set alarm and it will display "tamper fault"
 
I’m not an alarm person, I do have a good knowledge of electronics though. ( I fix variable frequency drives for a living). But I’m not familiar with the alarm programming setup at all.

Mine is an LED display only, so I don’t have the LCD readout unfortunately.

also you need to identify the 12V supply pair and disss. them from the panel. tried to pm you but you don't seem to have the permissions as yet. i coud tell you better over phone. i.e. talk you through it. or call and sort it for a modest fee.
