Some of these armoured cables have a section of outer sheath cut from them the only reason I can think of as to why is to get a better bend on the cable, any thoughts?

Not for bending as they would of put it on the bend below but anyway nah don't think so. Maybe they thought they were gonna make a termination or junction there and realised just in time they weren't.
 
Are they being used as a multi core or as a single phase to a switch panel.
 
Could be any number of reasons...assessment of damage would be a good guess.
I have seen similar stripping done,to enable polypenco wedges to open armouring,and cores spiked to check if live...with appropriate reason,of course :)
 
It's most possible then, that at some time the sheath has been cut to facilitate cable identification, by turning power off and on, and using a volt stick to detect voltage at each cable.
