Lol I am a Diyer but I have basic knowledge.

You said "the client". Which makes out you are getting payed for this, which raises the question of... Are you insured to do this work?
 
Have you found out what the 5 core cable is wired to?
 
The different speeds may mean the fan runs permanent on low speed and activation of the lighting in one of the rooms boosts it to a higher speed. You could then have a lower run over until it drops back to the low speed.
 
I am only assuming this is how it is connected. You need to find out exactly how the switching is connected, trial and error is not the best way forward.

John the forum rules forbid us to give out advice that may cause harm to someone who obviously does no know what they are doing, nothing wrong with no knowing Mate, your best option would be to call on the expertise of an Electrician, who can actually see what the installation consists of, asking for advice on an internet forum for something of this nature, is in my opinion asking for trouble.
