I Understand The Electrical Symbol But What I Don't Understand Is....

How this can actually represent the load on the back of a dimmer switch.

It looks more like a rollercoaster with a tree fallen on its track.

Can anyone shed some light on this before I waste hours of time on the internet trying to find the answer!

The wave represents the a.c. power and the arrow indicates it is adjustable through this wave.

It doesn't represent the load, it represents the function of the dimmer output as one with a variable waveform as stated by @westward10. Some units do show (or used to) a lamp symbol to represent the load.

I'm watching this video now of how they work.
