I'm building a shelf with LEDs, and I want to be able to dim them.
My question is, how do I do that?
I'm a major DIY'er so I'm not going to hire an electrician.
I'm a real nooby on this subject though...
What I figured was that all I need is a regular power source (I live in Europe so 220-240V), dimmable LEDs and a dimmer switch.
Then I just change the current bulbs for the LEDs and the current switch for the dimmer switch.
Am I correct?

No, don't get caught out with that one... the input voltage range 85-265V is what most fixed output switch-mode power supplies are designed to work with these days.
They will produce a constant light output with an input voltage range of 85 to 265V, which caters for the high and low tolerances of every single phase supply around the world....

If you used a dimmer switch, they don't lower the voltage as such, they chop out parts of the waveform, reducing the DUTY CYCLE.

Standard filament lamps respond to this, but electronic supplies don't, until the undervoltage lockout kicks in.

For example, I have one low energy CFL lamp plus two standard filament lamps in a luminaire.
It is controlled by a remote-control dimmer, but I just use it for plain on/off because I haven't got 2-way switching.
If I use the dimming function, the filament lamps dim, but the CFL stays full brightness just makes a nasty noise right until minimum is reached, then it flickers.

They MUST state DIMMABLE and inform you which TYPE of dimmer is correct for them. Otherwise you'll soon end up with failed lamps.

Why don't you just buy something like either the Philips Master 7W LED's or Aurora LED's as they are dimmable using a standard dimmer. I think the Philips is limited to about 10 lamps on one standard dimmer, if you want more then that you have to get a specific type of dimmer (leading edge) I think.
