when you say shuts down, do you mean it stops heating and won't go above 200?
 
Look for the model number online and see if you can google a circuit diagram. Should give you an idea of what stats are in the circuit. Sounds like an "over-temp" stat to me (rather than the temp control) as it has to cooldown before remaking.
