You might find an oven simmerstat works if not bothered about an exact temperature.Think they go up to 15Amps.

I want to convert my Ambiano convection oven to conventional oven. Is there a circuit I could build that would let me use the halogen element without the fan? It's a project I would love to do no matter how difficult. Thanks.

Maybe I'm missing something... so you want to use the oven as an oven but without the fan ? Just disconnect the fan ??

Curious to know why - is this some "specialised type of cooking", such as using the oven for SMD solder reflow of PCBs?

May not end up being safe if you stop the fan. ie something inside could catch fire?

I wasn't thinking. Thanks. You got me on the right track. I just now flipped my hot plate over and sat it on the circular glass part of the 'top' of the old, now junk, Ambiano convection oven. Works great for baking cookies. Great forum. I'm in New York USA by the way.
